Fish Paupiette with Tortellini Pasta
Did you know that A paupiette is a type of roulade and sometimes called a braciole. Paupiette may also refer to a classic French fish dish whereby a thin slice of fish (tuna, sole, whiting or even anchovy) is stuffed, rolled and secured with string before cooking in a stock.
A paupiette is a piece of meat, beaten thin, and rolled with a stuffing of vegetables, fruits or sweetmeats. It is often featured in recipes from Normandy.
It is often fried or braised, or baked in wine or stock. They are very popular in France, being sold ready-prepared in supermarkets and butchers.
Paupiettes can be made with various items such as chicken, beef, lamb, fish, veal, cabbage, turkey escalopes or slices of calves'sweetbreads.


Ingredients:
200 gms boneless Cream Dory fish
Mixed flavor of herbs (e.g. oregano, thyme, rose mary etc…)
2 cloves crushed garlic
2 spoons lemon juice
½ teaspoon of pepper
½ teaspoon of salt
100 gms asparagus
Sauce ingredients:
100 gms chopped small shrimps
100 gms mushrooms chopped
1 whole chopped onion
2 cloves of chopped garlic
2 cups fish stock
Garlic foam (100 gms milk, 100 cream, 2 cloves finely chopped garlic, salt and pepper)
How to make Tortellini Pasta
Dough for pasta (200 gms white flour, ½ teaspoon salt, 2 pieces eggs, 1 teaspoon olive oil mix together)
Tortellini Stuff (100 gms ricotta cheese mix with herbs flavor)
Procedure:
Mix all together 2 cloves of finely chopped garlic, the mixed flavor of herbs, 2 spoons of lemon juice, ½ teaspoon of pepper and ½ teaspoon of salt, set aside
Boil 100 gms asparagus and set aside
Place the fillet of the fish on a flat plate
Add the mixed ingredients on the fish fillet and roll it out
Pan Fry the rolled fish until turns to color brown
Remove the cooked fish placed on paper napkin to remove excess oil
On a clean plate, arranged the boiled asparagus, put the fried fish on top of it, add the stuffed tortellini pasta on top of the fish and garnish with spring onions and red capsicum. (see image)
